Bitwarden has already a contacts page, called identity types. My question is if is possible to setup my local instance of Bitwarden as a CardDAV server in localhost so that my IMAP mail client can in fact use the identities in my Bitwarden accounts as a contact book?

No, this is not something currently offered. Perhaps such a server can be scripted using the CLI and/or APIs.
