So if I set up a YubiKey with a passkey for logging into Bitwarden with encryption enabled, I’m able to log in with this passkey without having to enter my master password. But if I were to change my master password, will this passkey still work? Or will I have to delete the passkey and make a new passkey?

That answer is a bit “hidden”… In the release notes for 2024.7.1 it is said, that “passkeys with encryption” will persist rotating the account encryption key:

And since rotating the account encryption key is only possible by changing the master password, I guess we can assume, that the passkey will remain intact if you change the master password.

Passkeys are not affected by a master password change. Think of it as two padlocks linked together (like links of a chain) — if you unlock either padlock, the vault door can be opened:
